Recipe of Tuscan Salmon

Ingredients:

For The Salmon:

  • 2 salmon fillets
  • 2 tbsps olive oil
  • salt and black pepper, to taste

For The Creamy Tuscan Sauce:

  • 1 tbsp unsalted butter
  • 3 cloves garlic, minced
  • ½ small onion, finely chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 handful of fresh baby spinach
  • ¼ cup dry white wine (optional)
  • salt and black pepper, to taste
  • fresh basil or parsley for garnish (optional)

Instructions:

Prep The Salmon:

  • Pat salmon fillets dry with a paper towel to remove excess moisture.                                                                                                                                                 
  • Drizzle with olive oil and season both sides generously with salt and black pepper.

Sear The Salmon:

  • Heat your SENSARTE Duramax Nonstick Frying Pan Skillet over medium heat.                                                                                                                                          
  • Add a drizzle of olive oil and place the salmon fillets skin-side down (if using skin-on).                                                                                                                                                  
  • Cook for about 4-5 minutes per side, until golden and cooked through. Remove from the skillet and set aside.

Make The Sauce:

  • In the same skillet, lower the heat to medium-low and add butter. Once melted, add onions and sauté until translucent (about 2-3 minutes).                                                                                                                                                                       
  • Add garlic and cook for another minute until fragrant. Stir in the cherry tomatoes and cook until they begin to blister and soften.

Deglaze and Creamify:

  • Pour in white wine (if using) to deglaze the pan, scraping up all the flavorful bits from the bottom.                                                                                                                                               
  • Let simmer for 1-2 minutes until slightly reduced. Stir in heavy cream and Parmesan cheese. Mix well until the sauce thickens slightly.

Add Greens:

  • Toss in the baby spinach, stirring gently until wilted.                                                                                                                                                   
  • Season the sauce with salt and pepper to your taste.

Bring It All Together:

  • Return the salmon fillets to the skillet, spooning some of the sauce over the top.                                                                                                                                                   
  • Let simmer for another 2-3 minutes to allow the flavors to meld.

Serve:

  • Garnish with fresh herbs if desired. Serve hot with crusty bread, pasta, rice, or sautéed vegetables.
