Recipe of Tuscan Salmon

Ingredients:
For The Salmon:
- 2 salmon fillets
- 2 tbsps olive oil
- salt and black pepper, to taste
For The Creamy Tuscan Sauce:
- 1 tbsp unsalted butter
- 3 cloves garlic, minced
- ½ small onion, finely chopped
- 1 cup cherry tomatoes, halved
- 1 cup heavy cream
- ¼ cup grated Parmesan cheese
- 1 handful of fresh baby spinach
- ¼ cup dry white wine (optional)
- salt and black pepper, to taste
- fresh basil or parsley for garnish (optional)
Instructions:
Prep The Salmon:
- Pat salmon fillets dry with a paper towel to remove excess moisture.
- Drizzle with olive oil and season both sides generously with salt and black pepper.
Sear The Salmon:
- Heat your SENSARTE Duramax Nonstick Frying Pan Skillet over medium heat.
- Add a drizzle of olive oil and place the salmon fillets skin-side down (if using skin-on).
- Cook for about 4-5 minutes per side, until golden and cooked through. Remove from the skillet and set aside.
Make The Sauce:
- In the same skillet, lower the heat to medium-low and add butter. Once melted, add onions and sauté until translucent (about 2-3 minutes).
- Add garlic and cook for another minute until fragrant. Stir in the cherry tomatoes and cook until they begin to blister and soften.
Deglaze and Creamify:
- Pour in white wine (if using) to deglaze the pan, scraping up all the flavorful bits from the bottom.
- Let simmer for 1-2 minutes until slightly reduced. Stir in heavy cream and Parmesan cheese. Mix well until the sauce thickens slightly.
Add Greens:
- Toss in the baby spinach, stirring gently until wilted.
- Season the sauce with salt and pepper to your taste.
Bring It All Together:
- Return the salmon fillets to the skillet, spooning some of the sauce over the top.
- Let simmer for another 2-3 minutes to allow the flavors to meld.
Serve:
- Garnish with fresh herbs if desired. Serve hot with crusty bread, pasta, rice, or sautéed vegetables.
