
Ingredients:
For The Apple Compote Insert:
- 2 large apples, diced
- ½ cup granulated sugar
- 1 tbsp lemon juice
- ⅓ cup water
- 1 sheet gelatin, softened
- ½ tsp cinnamon (optional)
For The Apple Mousse:
- ½ cup whole milk
- 4 oz cream cheese, softened
- 3 sheets gelatin, softened
- 3 tbsps prepared apple compote
- ¾ cup heavy whipping cream
- 1 tbsp honey or maple syrup
- 1 small sponge cake base
For The Mirror Glaze:
- ½ cup water
- 1 cup granulated sugar
- ¾ cup glucose syrup
- 8 oz white chocolate, finely chopped
- 5 sheets gelatin, softened
- ½ cup sweetened condensed milk
- ⅓ cup neutral glaze (or corn syrup)
- red or green food coloring
Instructions:
Prepare the Apple Compote Insert:
- In your Sensarte Ceramic Nonstick Sauce Pan, combine diced apples, sugar, lemon juice, and water. Stir over medium heat until apples soften and caramelize slightly (about 10 minutes).
- Add softened gelatin and stir until fully dissolved. Pour the mixture into small silicone molds and freeze until firm.
Make the Apple Mousse:
- In the same Sensarte Sauce Pan, heat milk and cream cheese over low heat until smooth.
- Stir in the softened gelatin and mix until dissolved. Remove from heat. Then add the apple compote and honey, stirring well.
- Once cooled to room temperature, gently fold the mixture into the whipped cream until smooth. Transfer the mousse to a piping bag.
Assemble the Mousse Cake:
- Pipe a layer of apple mousse into individual molds or a round cake mold.
- Insert the frozen apple compote into the center and cover with another layer of mousse.
- Place a thin sponge cake layer on top. Freeze for at least 4 hours or until fully set.
Prepare the Mirror Glaze:
- In your saucepan, heat water, sugar, and glucose syrup until boiling.
- Remove from heat and add white chocolate, softened gelatin, sweetened condensed milk, and neutral glaze. Stir until smooth.
- Add a few drops of red or green food coloring to create an apple-like effect.
- Cool the glaze to 95°F, then pour over the frozen mousse cake for a glossy finish.
Final Touches:
- Let the glaze set, then decorate with an edible apple stem (chocolate stick or real apple stem).
