Pour the entire bottle of red wine into the sauce pan. Opt for a robust red wine like Cabernet Sauvignon or Merlot for rich flavors. Slice the orange. If using a vanilla bean, split it open to expose the seeds. Add the sliced orange, cloves, cinnamon sticks, vanilla bean (or extract), star anise, and a pinch of nutmeg. Drizzle honey or maple syrup into the mixture. Allow the mixture to simmer on low heat for at least 15-20 minutes.
