Season the chicken breasts with salt and pepper and cook them until they are browned on both sides. This should take about 5-6 minutes per side. Remove the chicken and set it aside. In the same pan, add the onion, carrots, and celery. Sauté them for about 5 minutes, or until they start to soften. Add the minced garlic and cook for an additional 30 seconds.
